Season fish with all purpose seasoning
Use a food processor or mini-chopper to cut coriander into finely chopped bits.
Add coriander to the can of coconut milk and whisk thoroughly. Add paprika, salt, black pepper and ginger to the mixture.
Arrange fish fillets in a deep baking dish, pour coconut milk mixture over the fish and put scotch bonnet chili in the middle of the baking dish.
Bake at gas mark 5 (190°C) for 45 mins.
Don‘t be afraid to use your hands to rub the seasoning into the fish.
Goes well with rice.
