Fish Parcels recipe

We first used to make this when we went on family holidays in Cornwall and only had basic ingredients in the house - used to buy fish at the fish market in Padstow and pick up veg from the farm shop in the village we stayed in. Everyone, including the children, would help prepare the meal, lay the table and so on - and it was something everyone liked and could eat from the youngest to the oldest family member, being filleted fish. Then we'd sit in the garden overlooking the bay to enjoy our meal. Brings back lots of happy memories of family holidays :-)

Place the fish fillets in a big square of foil or greaseproof paper

Slice the onions thinly and halve the cherry tomatoes

Scatter over the fish fillets along with a splash of white wine on each, a pinch of mixed dried herbs and a sprinkle of salt and pepper

Loosely wrap the fish and veg parcels up - bring the sides of the foil or greaseproof papper up and scrunch at the top for form a loose but sealed parcel

Place in an oven proof dish and cook for approx 20 - 25 mins (depending on the thickness of your fish) on 180 degrees

Open carefully - steam will come out! - and check if the fish is cooked through, then serve up the fish, veg and all the juices on each plate

Lovely served with boiled or steamed new potatoes and any other veg of your choice if liked

If you don't want to cook with wine you can replace with a sprinkle of lemon juice and a splash of water Obviously if you have more than two to feed then just adjust the quantities accordingly - other than one fish fillet per person all other ingredients can be adjusted according to what you have
