Heat the oil in a small frying pan and fry the bacon until crispy. Remove the bacon from the pan and set aside.
Wipe the pan clean and return to the heat. Melt the butter and add the beaten egg. Make an omelette and just before it is cooked, sprinkle with the cooked bacon then fold it over.
Split the croissant and slide the omelette inside. Pop it into a sandwich maker or mini griller for a couple of minutes until crisp.
