Wash the fruit
Roughly chop the fruit into pieces, it doesn‘t matter on the size as you will be blending it up.
Pour the Coconut Water, mint and yoghurt into a container suitable for blending in
Add the chopped fruit
Add the Matcha Green Tea powder. Having had breast cancer I add this to lots of my food as Green Tea Powder is a anti-cancer superfood. Be careful not to use too much as it‘s very strong.
Using a hand blender (or smoothie maker), blend until the mixture is a fairly smooth liquid. If it‘s too thick you can add more yoghurt, coconut water or just use normal water. It should be the consistency of smoothies.
Squeeze in some lemon juice, this will stop the mixture going brown.
The smoothie will have bits in. If you don‘t like bits then pass it through a sieve.
At this stage you can drink it as a smoothie but in this hot weather I like to pour the mixture into lolly moulds. Put in the freezer and leave until frozen (it will take a good few hours for them to solidify, I usually leave them overnight)
