Pre-heat the oven to 200°. Bring a large saucepan of salted water to the boil and cook the potatoes for 6-7 minutes until tender.
Drain and allow to steam off for a few minutes. Combine the pork, potatoes and garlic in a roasting tray. Add the oil and seasoning and toss to coat well.
Roast for 20-25 minutes until the potatoes are crisp on the outside and the pork is cooked through. Remove and stir in the parsley.
Adjust the seasoning if necessary then spoon onto serving plates and garnish with a sprig of parsley and a bay leaf. Serve immediately.
