Fried halloumi, grape and cucumber salad recipe

Add this recipe to your binder.

In a serving bowl, toss together the cucumber, grapes and the chopped mint. Set aside. 

In a small bowl take all the ingredients for the salad dressing and whisk them together. Season to taste and set aside.

Heat the olive oil in a large nonstick frying pan and cook the halloumi, turning occasionally, until golden all over. Remove and allow to cool a little.

To serve, add the halloumi to the salad ingredients, spoon over the dressing and scatter with the
toasted almonds.

  • 1tsp olive oil
  • 250g (8oz) halloumi cheese, drained and cubed
  • 2tbsp toasted flaked almonds
  • For the dressing

  • 2tbsp lemon juice
  • 2tsp clear honey
  • 4tbsp extra-virgin olive oil
