Had some Marzipan left over a few Christmas‘s ago and fruit so thought I‘d put it in a cake instead of on top.

Rub in flour with butter/margarine either by hand or food mixer, stir in sugar, dried fruit, walnuts,cherries, marzipan and beaten eggs. Mix all together with a wooden spoon. Spoon into a 1lb loaf tin which has been greased and lined with parchment paper smooth top over with a pallette knife. Bake in a pre-heated oven 180C-Gas 4 Fan Oven 160 for about 1 to 1 and a 1/4 hours. Test to see if cooked, by putting a knife into the cake, it won‘t come out completely dry because of the marzipan. Leave in tin for about 15 mins dust with icing sugar if required.

Parchment is the best medium to line the tin not greaseproof paper as this will stick to the cake. Also when testing if it‘s done you should be able to see if it‘s marzipan stuck to the knife not the cake mix. This cake is also lovely sliced and heated in a microwave for about 10 seconds a slice (1/2“). Great served with custard too as a pudding. This cake can be made as well in a round tin. Also when I make this I always double up the recipe and make two one to eat now and one to freeze keeps really well in the Freezer for a few months.
