As a part of the Tesco Orchard, I was sent to try Tesco Finest* Authentic Italian pasta. With a great choice, I decided to go for the Fusilli Lunghi Col Buco mainly because my daughter liked the curly spiral shape. Fusilli Lunghi col buco – translates to fusilli with a hole. The hole helps the product to cook evenly. It’s delicious served with King prawns and cherry tomatoes, however being a vegetarian I decided to pair it with oven roasted vegetables and tomato base sauce.
Chop 1/2 onion, courgette, cherry tomatoes and carrot and place on to a baking tray and roast for 20-25mins at 200C
In a medium sauce pan fry the onion and garlic until soften. Then add passata and 300ml of stock with the herbs and spices and simmer for 20mins
Boil water with salt and oil and cook pasta for 8-10 minutes
Drain pasta when cooked and combine the sauce, pasta and vegetable together and serve.
