Pre-heat the oven to 220°C.
Arrange the chips in a single layer on a large baking tray. Bake for 25 minutes until golden brown all over and crispy on the outside. 10 minutes before the chips are ready, preheat the grill to hot.
Grill the gammon steaks for 10-12 minutes, turning occasionally until cooked through. Remove the gammon and chips at roughly the same time. Wrap the gammon in aluminium foil to insulate well.
Bring a large saucepan of salted water to the boil and blanch the peas for 1-2 minutes. Drain the peas. Arrange the gammon steaks between 2 serving plates. Spoon the chips and peas on the side. Garnish with a few pineapple rings and a sprig of curly parsley before serving.
