Preheat the oven to 175ºC, 350ºF, Gas Mark 5.

Place the pepper halves in a roasting tin and divide the vegetables and garlic between them. Sprinkle with the olive oil, cumin seeds and seasoning and bake in the oven for 45 minutes to 1 hour. Serve with a crisp green salad.
