Ginger and Lemon Sponge recipe

This recipe was given to me by an elderly neighbour who had had it in her family for a very long time. It is very easy to make, with ingredients usually at hand and my male friends love it!

Grease two 7inch sandwich tins. Pre heat oven to Gas 4.

Cream butter and caster sugar until light and fluffy. Beat in eggs separately (adding a little flour if needed).

Fold in flour, treacle, ground ginger, diced crystallised ginger (to taste) and grated rind of the lemon.

Divide mixture between the two tins. Bake 20 to 25 mins. Cool in tin for a few minutes then turn out onto wire rack.

Cream butter, icing sugar and juice from the lemon. Add diced crystallised ginger (to taste).

When sponges are cold spread the filling on one half, top with other half. Sprinkle icing sugar over top.

If you don't have a lemon to hand use juice from a bottle.
