Cut ginger into matchsticks. Heat oil in a wok. Add ginger, garlic and 50ml (2fl oz) water and simmer for 2 minutes.

Trim base of pak choi. Slice in half lengthways. Add to wok and cook for 2 minutes, tossing constantly. Serve on a bed of noodles with drizzle of soy sauce.
