I went to a cookery class for the very first time last year. I made this recipe and thought it was a good twist on the usual cheescake recipe- using the jamaica gingerbread cakes. My family love it- we have named it the conversation stopper- as no-one speaks for ages while eating it!It's DELICIOUS! Everyone has to try it-believe me- plus it only takes 20mins to prepare and no cooking.

Slice the ginger bread cake into 1cm slices then place under grill to dry out/toast. Once cooled down crumble into a cheesecake ring

Place the cream cheese, caster sugar, creme fraiche and vanilla seeds into large bowel. Whisk togehter until smooth.

Fill the cheescake ring to the top and smooth off with a palette knife.

Place in fridge for 2 hours

To make the balsamic strawberries to sit at the side. Heat a non-stick pan and briefly fry the the strawberries with some caster sugar

Add the balsamic vinegar and heat for 30 seconds. Serve at the side. Yum!

If don't want strwaberries could replace with blackberries. Make sure the gingerbread is hard enough to crumble for the base.
