This is a really good and tasty recipe. The pineapple work really well with the chiili and the pork. My family love this dish
Mix balsamic vinegar, ketchup, soy sauce, honey, chilli paste, garlic and ginger together in a large bowl. Add the pork loin medallions to the sauce and leave to marinate for 30 minutes.
Place the marinated pork in a roasting tin. Cover and bake for 45 minutes at Gas 4/180C/350F. Remove the pork from the oven. Place the pork under a grill, brush with the rest of the marinate and grilled for 5 minutes on each side till golden brown.
Heat the brown sugar and thinly sliced pineapple in a pan. Add in lemon juice. Stir till the sugar caramelised. Stir in chopped chilli. Remove from heat.
To serve, cut the pork into chunks. Arrange on a warm plate, spoon over the chilli pineapple. Sprinkle with chopped herbs. Delicious with mashed potatoes or savoury rice.
