pre heat oven to Gas 4 / 180c. Put half the pecans on a baking tray and bake for 5 minutes until lightly toasted then chop the pecans roughly. Chop the dark chocolate roughly too.
Mix the dairy free spread and sugar together until smooth and creamy. Add the vanilla extract & eggs. The mix will be sloppy at this point until the flour is added.
Sieve the flour, xanthan gum & baking powder and gradually add this to the spread/sugar/egg mix. Beat well until all the dry mix is fully incorporated.
mash the bananas then fold these into the mixture with the chopped nuts and chopped dark chocolate.
line a long, flat cake tin (approx 33 x 23cm) with greaseproof paper. Pour in the mix. Sprinkle the remaining pecans over the mix.
bake for 40 - 45 minutes or until the middle of the cake springs back when slightly pressed. Then remove from over and allow to cool before slicing into approx 12 slices.
When serving at a street party, add mini union jacks attached to cocktail sticks and make signs using the blank paper to say 'this cake is suitable for vegetarians and coeliacs'. This ensures anyone with a restricted diet can safely same the cake.
