Gluten Free Banana Bread and Butter Pudding recipe

The mother of an old boyfriend used to make a more fattening version of this by frying the bread and banana in a lot of butter and sugar and mixing the eggs with cream. I have adapted this to make it healthier and using gluten free bread.

Peel and slice the bananas

Melt a little of the butter, add two teaspoons of the sugar and lightly fry the banana until the sugar goes syrupy and the banana is a pale golden colour. Remove from the heat.

Lightly grease a baking dish

Butter the slices of bread and cut into quarters. You can cut off the crusts but it is not essential.

Line the baking dish with the bread and butter. Add a layer of banana and continue layering.

Mix the eggs, milk and remaining sugar together and pour over the bread and banana. Grate some nutmeg over the top.

Bake at 160 degrees centigrade(fan oven), gas mark 3 for around 40 - 45 minutes. Serve warm with cream

Both white or brown gluten free bread works well, and dairy free milk could be substituted for ordinary milk.
