Gluten free bread and butter pudding recipe

Gluten free bread and butter pudding

I am a bzz agent and am currently on the Tesco free from campaign. I get to trial products at a reduced price and then review them.

melt the butter either in the microwave or on the hob

coat a baking tray with a thin layer of melted butter

lay slices of the gluten free bread in the bottom of the tray so that all spaces are filled

brush some of the melted butter over the bread layer

sprinkle some sugar, cinnamon and some of the dried fruit over the bread.

place another layer of bread over this

repeat steps 5 and 6 until you reach the top of the baking tray

on top of the final layer, sprinkle a little more sugar and cinnamon

pour milk into the tray until it reaches the top, so that all the bread is covered

place in a pre-heated oven at 200oc for 30 mins and then reduce the heat for a further 10/15 mins until the top is golden brown and no fluid comes out when you press the surface

eat hot or cold with custard, ice cream or set yoghurt

Any bread can be used for this recipe and it is very good for using up bread that is reaching it's best before date. The sugar could be replaced with sweetener, any dried fruit could be used, any milk could also be used and a different sweet spice could be used if you are not a fan of cinnamon.
