break chocolate into squares and put in an over proof bowl
put oven proof bowl in a saucepan with 250ml water and place on hob on low heat to melt
whisk whites until they form hard peaks and set aside
when chocolate has melted stir in yolks quickly until throughly blended
take off heat and keep stirring for three minutes to cool mixture
carefully fold in egg whites using figure of eight motion
divide mixture into four portions allow to cool sand then place in fridge until required. serve same day.
before serving you can decorate with flakes of chocolate glace cherries matchmakers ice cream sprinkles nuts etc
i find this recipe very rich so do not worry if portion size small. i used to make this all the time with my own free range eggs.
