Lemon cake is my ultimate favourite in sweet treats, this gluten free recipe has the most wonderful flavour.
Heat oven to Gas Mark 3/150C
Grease 23cm round baking tin
Beat together butter and caster sugar until light and fluffy
Add eggs one at a time and beat further
Fold in polenta, almonds and baking power
Mix in half the lemon juice, saving the rest of icing
Pour into cake tin and bake for 45mins-1hr, test by inserting cocktail stick which will come out clean when baked.
Leave cake to cool for 15mins while making icing
Combine remaining half of lemon juice with icing sugar, warm slightly.
Make small holes with cockail stick in top of cake, then pour liquid icing over the top
Leave to set slightly then enjoy
Lower temp to 140C for fan assisted oven
Ensure eggs are room temperature to avoid curdling
If cake appears to be browning quickly place foil over for remainder of cooking time
