I wanted to make gluten free cakes for a new office colleague as we have a Cake Thursday every week in the office where staff bake a cake every weeks on a roster. Now we have an easy delicious treat which my coeliac colleague can eat :-)
Line a small to medium sized square baking tray with greaseproof or baking paper. Cling film will also work if you don;t have the other two.
Place biscuits into a plastic bag and bash with a rolling pin or just the side of your fist until they're broken various sized small pieces, keep to one side for the moment. Chop the Mrs Crimbles macaroons (plain, chocolate or cranberry) into small bite-size pieces and add to the broken biscuits.
In a large heat-resistant bowl melt the butter, dark chocolate, vanilla essence and the golden syrup in a bowl over a pan of boiling water, gently. stiring it constantly until the mixture is smooth and glossy, then remove from the bowl carefully from the heat.
Take the broken biscuits, chopped or mini marshmallows, chopped macaroons and any additional delicious ingredients you wish to include and pour into the pan of the warm chocolate mixture. Stir all this into the mixture until everything is completely covered, and then add a few marshmallows to the top of the mixture, peeking through the chocolate for extra appetising appeal..
Pour all of the the mixture into the lined baking tray, scraping the bowl to make sure you get all the goodies and chocolatey goodness, and spread the mixture out to the corners.
Refrigerate this tray of lovliness for at least 2 hours in the fridge, then cut into slender fingers as the mixture is very rich and a small slice goes a long way.
You can add all sorts of goodies to this receipe- nuts, broken M&Ms and Maltesers, raisins and chopped dried apricots and as long as all the biscuits added are gluten free, it is a totally more-ish gluten free treat!
