Gluten Free Sticky Toffee Pudding recipe

I have lots of gluten free recipes and am looking to get them to as many people as possible

Chop the dates and put in a bowl, add the bicarbonate of soda and top with boiling water, set aside

In a separate bowl mix all the remaining ingredients together thoroughly

Puree the dates mixture with a blender adding it to the cake mix and stir together

Grease a glass or plastic pudding bowl and line the bottom with a disc of baking paper

Fill the bowl with the cake mix and cover tightly with cling film

Cook on full power in the microwave for 2 - 2 1/2 minutes

Serve with toffee sauce. This is a really simple Gluten Free dessert

  • 100g light soft brown sugar
  • 115g dried pitted dates
  • 50g soft butter
  • 120ml boiling water
  • 1tsp bicarbonate of soda
  • 1 Lrg egg
