Gluten Free Victoria Sandwich cake with fresh cream and Strawberries

I became gluten free about a year ago and have had to learn how to convert many of my favourite recipes so I could eat them. I have started a blog to help me, called My gluten free journey. http://mygfjourney.tumblr.com or https://www.facebook.com/pages/My-Gluten-Free-Journey/496219857121935

Preheat the oven on 180 Degrees and line a cake tin. Cream the sugar and butter together and add vanilla. Add flour, baking powder and eggs in addition and mix well. Pour mixture into the lined cake tin and cook for 25 minutes. When cooled decorate and remember to dust with icing sugar for that vintage cake appeal.

This cake was double the mixture as was for a family event to feed 10 people. NB: You can change the flavour of this cake by substituting the vanilla for a different flavour such as almond, orange or lemon. I made my mum a citrus version for her birthday by grating the rind of 1 lemon and using a good squeeze of lemon juice. I filled it with fresh cream and mandarin segments. Enjoy!
