This is a really easy gluten free recipe, to increase the mix add the ingredients by volume not by weight, use cups and it will always work

Pre-heat the oven to 200c Whisk the eggs into the flour to make a thick paste

Slowly add the milk, whisk together well

Season to taste

Add 1 tablespoons of oil to each section of the pudding tray and heat in the oven until almost smoking

Whisk the batter and fill each mould 3/4 to the top, the oil may spit so be aware

Bake for 20 - 22 minutes until golden and crisp

If the batter settles it will need to be whisked before use as the flour will sit at the bottom of the bowl
