Bought goji berries, on the premise that they are a super food, but found them dry and dull as a snack. Was making a batch of muffins, where i would have usually added chocolate chips, but trying to be healthy and thought good way of making my muffins super!
Mix flour, sugar, goji berries and baking powder.
Make a well add all other ingredients, do not over mix just blended!
Spoon into muffin cases, in a greased muffin tin.
bake 200c 20 mins.
Can use vegetable oil if haven‘t any sunflower oil.
Can also make using gluten free flour works just as well.
