Preheat oven to Gas Mark 6, 200°C, 400°F.
Cut each potato into quarters (cut along the length and then the width). Cut each quarter into 3 or 4 smaller wedges. Lay the wedges on a baking tray in one even layer. Season with salt and pepper, and sprinkle generously with paprika.
Drizzle the potatoes with olive oil and toss well until coated on all sides. Place the tray in the centre of the pre-heated oven and bake for 30 to 40 minutes, turning the wedges after 15 minutes.
Serve hot, with ketchup if you prefer.
