Pre heat the oven to 180°C, gas mark 4.
Mix together the butter and sugar and then add the egg yolk and syrup. In a separate bowl mix the ginger and flour together and then add gently to the butter mixture.
Scoop into small balls and place these on baking parchment, pop in the oven and cook for 12 - 15 minutes.
Tip: Roll the mixture into walnut sized balls and do not flatten them as this way they cook into near perfect circles.
