For the granola crunch
Preheat oven to 180C. Place the oats, nuts and seeds in a food processor and blitz the mix whilst drizzling in honey. Tip the mix out on a baking tray and place in a hot oven for 15 minutes until golden. Remove from the oven and allow to cool.
For the breakfast smoothie
In the blender jug mix the yogurt, banana and honey. Add 1 cup of the granola crunch and blend for 30 seconds. Serve in a glass.
For the fruit compote
Place the dried fruit into a saucepan with the juice and zest of one orange. Place the pan on a medium heat and simmer until the fruit softens. Spoon two large tablespoons of compote in the bottom of 4 glass dishes. Top with a spoonful of Greek yogurt. Sprinkle the granola crunch on top and drizzle a little honey over and enjoy.
Hints and tips
The breakfast smoothie can be turned into a bowl breakfast for the winter by just placing it to warm in the microwave for a few minutes with a little extra granola added.
