Lightly beat the egg and add the salt and pepper, and herbs.
Soak the bread in the egg mixture.
Fry the Pancetta in a frying pan, [no oil needed], until crisp. Remove and keep warm.
Add the spring onions and tomatoes to the plan, cook until tender. Remove and keep warm.
Heat the oil in the pan and fry the soaked bread until crisp and golden.
Place the bread on a serving plate with the pancetta, spring onions and tomatoes.
Serve with maple syrup, if you like!
Add chopped basil and dill to the egg mixture too, if you like.
