wash and wipe potato then stab with fork and set to cook for 10 mins in microwave

slice olives and feat and mix with pesto sauce

when cooked cut a cross on top of potato and squeeze sides of potato so innards pop out! Cover with feta olive and pesto mixture

squeeze cooked potato with a teatowel as innards can release steam
