Authentic Thai green curry paste recipe from Thai cooking school my brother went to.

Chop all the ingredients and blitz in a blender. Paste will keep at least a week in the fridge

Great base for green Thai curries and it tastes much better with fresh ingredients.

  • 5 Tesco green chillies
  • 4 Tesco peppercorns
  • 1tsp Tesco coriander seeds
  • Half tsp Tesco cumin seeds
  • A quarter tsp Tesco salt
  • 1 tbsp Lemongrass
  • 1 tsp Galangal or ginger
  • Half tsp Tesco coriander root
  • A quarter tsp Barts keffir lime leaves or fresh ones
  • Half tsp Shrimp paste
  • 1 tbsp Tesco shallots
  • 1 tbsp Tesco garlic
