Heat a griddle pan over a high heat. Put the courgettes in a bowl and drizzle over the olive oil. Toss to coat, then cook for 1-2 minutes each side, until griddle marks show.
Meanwhile, prepare the couscous following the packet instructions. Use a fork to loosen the grains.
Combine the lemon juice, chilli and extra virgin-olive oil, and pour over the couscous. Stir through the courgettes, tomatoes, onions, mint and a little seasoning. Grate over some cheese, to serve.
