Griddled courgettes recipe

Cut the courgettes lengthways into long ribbons by either slicing them on a mandolin or drawing a vegetable peeler down their length. Toss the ribbons with the olive oil and thyme and coat thoroughly.

Heat a griddle pan and griddle the courgettes in batches for 2-3 minutes on each side until lightly striped and tender. Toss with lemon juice, salt and pepper and pine nuts and drizzle with a little extra virgin olive oil before serving.
