Brush the chicken with 2tbsp of oil and season with salt, pepper, thyme and crushed garlic.
Dice the vegetables into serve size pieces and place in a cooking bag with the chicken; at 200°C in a preheated oven. Cook until tender for approximately 45-60 minutes, or until cooked.
In the last 10 minutes, open the bag to crisp the chicken skin up and serve.
