Mix together the cumin seeds with ground black pepper and salt and season the chops with the mixture. Preheat the grill. Brush the peppers and courgettes with oil and grill for five minutes on each side, or until soft with visible marks. Keep warm.
Grill the tomatoes for five minutes and set aside with the other vegetables. Grill the chops for five minutes on each side. Arrange the vegetables into four bowls, add the chops and garnish with sprigs of thyme.
