  1. Heat a griddle pan to high, rub the lamb steaks with a little olive oil and grill for 3-4 minutes per side, or until cooked to your liking.
  2. Remove from the pan, rest for a minute, then slice. Place in a bowl and toss with 2tbsp mint sauce.
  3. Cut the pitta breads in half and open up. Stuff with the lettuce, tomato and lamb and eat while hot.
