Cooking lettuce may seem unusual but you'll be won over by the transformation of soft leaves with smoky flavour and charred edges. Perfect as a summer salad for two, this easy recipe has a zesty lemon dressing and could be served as part of an al fresco meal, or even cooked on the barbecue instead.
- Heat a griddle pan until very hot. Brush the cut side of the lettuce with 1 tbsp olive oil and season. Griddle for 2 mins or until dark lines appear. Remove to a serving dish.
- Top with the onion, cucumber, pepper and mint leaves.
- In a small bowl, mix together the remaining olive oil, lemon juice and zest, vinegar and pine nuts.
- Season to taste and pour over the salad.
