Grilled romaine lettuce with dressing recipe

Try this crisp and tasty salad recipe, served with a nutty and zesty dressing. 

  1. Heat a griddle pan until very hot. Brush the cut side of the lettuce with 1 tbsp olive oil and season. Griddle for 2 minutes or until dark lines appear. Remove to a serving dish.
  2. Top with the onion, cucumber, pepper and mint leaves.
  3. In a small bowl, mix together the remaining olive oil, lemon juice and zest, vinegar and pine nuts.
  4. Season to taste and pour over the salad.

  • 45ml (3 tbsp) extra virgin olive oil
  • 1⁄2 small red onion, thinly sliced
  • 1⁄2 small cucumber, thinly sliced
  • 1 red pepper, thinly sliced into rings

  • 1⁄2 lemon, juiced and zested
  • 2 tsp white wine vinegar
  • 1 tbsp toasted pine nuts, roughly chopped
