Try this crisp and tasty salad recipe, served with a nutty and zesty dressing.
Heat a griddle pan until very hot. Brush the cut side of the lettuce with 1 tbsp olive oil and season. Griddle for 2 minutes or until dark lines appear. Remove to a serving dish.
Top with the onion, cucumber, pepper and mint leaves.
In a small bowl, mix together the remaining olive oil, lemon juice and zest, vinegar and pine nuts.
Season to taste and pour over the salad.
