Any whole fish will do, so long as it's not huge and not goldfish sized.
Pre-heat oven to 180°C.
Wash fish and prawns under cold tap, refrigerate prawns.
Make 1 inch apart cuts into the flesh of fish. Stuff onion, chopped parsley (keeping aside a teaspoon) & 1 sliced garlic clove into cuts in side of fish. Grind over pepper and salt to taste. Drizzle with 2tbsp olive oil. Place on an oiled baking tray or cast iron dish and place in preheated oven for 30 mins.
After 20 minutes heat 2tbsp olive oil in a pan, add garlic and remove after 1 min. Fry prawns on a medium heat for 5 mins approx (until pink and slightly browned) and sprinkle with parsley.
Remove the fish from the oven and serve up with prawns and lemon wedges on the side.
