I was asked if I could make cakes with Guinness in for a friend and this is a recipe I found that worked well and tasted really nice.
Preheat oven to 160 oC
Melt Butter & Guinness in a pan over low heat
Whisk sugar & Cocoa together and add to the pan with melted butter & Guinness
Whisk Sour cream with eggs and vanilla and pour into the pan with other ingredients
Stir in the flour and bicarb of soda until you have a batter with no lumps
Pour into cupcake cases 3/4 full and bake for 20 minutes
Remove from oven and cool completely before making topping
For topping whip cream cheese and Double cream until smooth then sieve over the icing sugar and mix until smooth.
