Pre heat Oven to 220c. Put peppers, courgettes & onions in a large baking tray and drizzle them with oil. Season with salt and plenty of ground black pepper, toss everything together. Roast 20 mins.
Pat the fish dry. Seaonson with blacl pepper, wrap in ham. Add fish to tray and mix bradcrumbs with cheese and parsley then scatter on fish and veg. Bake for a further 15 mins. Drizzle with Balsamic Vineger to serve.
