Put a pan of water on to boil.
Meanwhile, fry the chicken breast in a hot frying pan with a little olive oil until golden and cooked through.
When water is boiling, add the pasta and cook according to packet instructions. Once cooked drain pasta and return to the pan. Add the cooked chicken and lemon juice and lemon zest to taste. Grate in the haloumi cheese and season to taste. If dry, add a bit of olive oil
Tip: Freezing the cheese makes it much easier to grate.
