Heat the oil in a frying pan and cook the mushrooms for 5 – 8 minutes, until softened and golden. Add the ham to the pan and cook for another couple of minutes.
Heat a grill to high. Season the eggs and pour into the pan, cook for 5 minutes over a medium heat, stirring a little. Grate the cheese, scatter over and place under the grill for another few minutes, until golden and cooked through.
