Ham and parsley pancakes recipe

Cut the ham into thin strips. Break the eggs into a mixing bowl and season with salt and pepper. Add the ham and parsley. Beat the ingredients together using a fork. Melt the butter in a frying pan. Lay a crêpe in the pan, pour on 1/3 the eggs and cover with another crêpe.

After 3 minutes, turn the crêpe over and cook for a further 2 minutes. Place in a preheated oven at gas mark 5 (150°C). Repeat the process twice more to cook the other crêpes. When you take the crêpes out of the oven, cut them into 4 and serve them immediately.

Tip: Serve with a cucumber salad and a yogurt dressing.
