The classic pairing of gammon and pineapple works really well in a burger bun – great spread with a little mustard too. This recipe is a mouthwatering leftovers idea from our roast gammon with citrus glaze dish. The leftover meat needs to be thoroughly reheated until piping hot and should never be re-heated more than once.
- Heat a griddle pan on the hob over a high heat. When it is hot toast the cut sides of the burger buns until golden. Remove to warmed plates while you prepare the gammon and pineapple.
- Brush the gammon all over with the oil and griddle for 2-3 mins on each side until heated right through. Place a slice on the base of each burger bun.
- Add the pineapple to the pan and cook for 1-2 mins on each side. Place on top of the gammon with a couple of lettuce leaves and a squirt of ketchup or mayo. Sandwich with the top of the bun and eat straight away.
