The classic pairing of gammon and pineapple works really well in a burger bun – great spread with a little mustard too. This recipe is a mouthwatering leftovers idea from our roast gammon with citrus glaze dish. The leftover meat needs to be thoroughly reheated until piping hot and should never be re-heated more than once.
Heat a griddle pan on the hob over a high heat. When it is hot toast the cut sides of the burger buns until golden. Remove to warmed plates while you prepare the gammon and pineapple.
Brush the gammon all over with the oil and griddle for 2-3 minutes on each side until heated right through. Place a slice on the base of each burger bun.
Add the pineapple to the pan and cook for 1-2 minutes on each side. Place on top of the gammon with a couple of lettuce leaves and a squirt of ketchup or mayo. Sandwich with the top of the bun and eat straight away.
