Ham, cheese and pineapple quesadillas recipe

Quesadillas (h)

Easy to make, these ham, cheese and pineapple quesadillas served with baked sweet potato wedges make a great meal for children.  

  1. Spray a large frying pan with oil, place a tortilla wrap in the pan, spread over 2 tbsp Goodness tomato sauce, top with half the Goodness sliced ham, Goodness pizza flavoured cheese slices or grated cheese, Goodness pineapple pieces (if using) and then top with another tortilla wrap.
  2. Place over a medium heat and fry for 2-3 minutes or until the cheese is beginning to melt. Press down with a spatula to make sure it sticks together.
  3. Spray with a little more oil, flip over using a spatula and fry for another 2 minutes on the other side or until just golden. Slide onto a chopping board and cut into wedges and serve hot with hot baked sweet potato wedges.

Cooking tip

These quantities are assuming that one child will eat half a quesadilla. Double the quantities if you think your child will be more hungry than this.

  • 6 slices Goodness sliced ham
  • 4 tbsp Goodness tomato sauce
  • 80g (3 1/4oz) Goodness pizza flavoured cheese slices or 80g (3 1/4oz) low fat medium cheddar, grated
  • 35g (1 1/4oz) Goodness pineapple pieces, in juice, drained and cut into smaller pieces (optional)
