Ham and pea pasta salad recipe

Bring a pan of salted water with the bay leaf added to the boil, add the peas and cook until tender. (3-4 minutes). Drain and reserve. Cut the ham into small cubes.

In a large pan of salted water cook the pasta as per the packet instructions, when al dente, drain and rinse under cold water. Place the pasta, peas and ham in a large mixing bowl. Add the fresh ground pepper, nut oil, sunflower and vinegar and mix well.

Sprinkle over the grated Parmesan cheese and serve as a lunchtime accompaniment.

You can also substitute ham for other seasonal meats such as cold turkey, cold pork or chicken.

  • 300g elbow macaroni
  • 150g fresh shelled garden peas (you can also use defrosted frozen peas)
  • 3 large thick slices of white ham
  • 30g grated parmesan cheese
  • 1 bay leaf
  • 2tbsp sunflower oil
  • 1tbsp groundnut oil
  • 1tbsp of white wine vinegar
  • rock salt
  • ½tsp fresh ground green or black pepper
