Preheat oven to Gas Mark 6 /200degrees C
Fry/grill/oven bake pork chops until brown and after draining off excess fluid, place in ovenproof dish
Into a jug, pour the lemon juice, demerera sugar, drain the pineapple juice from the tin and add the cornflour
Fry off the onion, peppers and courgettes, if using and mushrooms in the oil until soft
Then add the mixture from the jug, bring to the boil and keep stirring until thickened
Pour over the pork chops and place in the oven until everything else is ready.
Serve with roast potatoes, chips, rice, green vegetables, salad or a mixture of all of them.
