I‘ve used this recipe many times and changed it depending on how hot I feel like having it. I‘m currently trying to lose weight and this recipe is very healthy, tasty and filling.

Peel and finely chop onion and garlic. Fry until they begin to soften

Add all the spice powders, fry for 2-3 minutes then add the tomato puree

Defrost the cod (if bought frozen) for around 2 minutes. Cut into chunks

Add the boiing water into the pot and add the fish,

Bring to the boil then simmer with the lid on for approx 12 minutes until the fish is cooked

Squeeze in lemon juice, add salt and service with rice / naan bread.

Be very careful not to overstir the fish as this will cause it to break up. Coriander can be used towards the end of cooking to add variety. If extra heat is required fresh / dried chillies can also be used. If this is a dish that will be made regularly it will save time to make a bigger batch of spices up and stored in a jar. Any white fish can be used, cod haddock etc. For a stronger flavour smoked fish should be used.
