Pre-heat the oven to Gas 6, 200°C, fan 180°C.
Mix all the ingredients except the egg and breadcrumbs in a bowl.
Divide the mixture into 4 large or 8 small portions and shape into cakes.
Pour the beaten egg into a shallow dish and spread the breadcrumbs evenly on a plate. Dip the cakes first into the egg then coat in breadcrumbs.
Place on a greased baking tray and bake for 20-25 minutes until golden brown.
