A simple zesty prawn pasta dish that's so quick and easy to make, it's the perfect solution for a mid-week meal or a quick something thrown together.
Cook the linguine according to the packet instructions.
While the pasta is cooking, fry the garlic in the olive oil on a very low heat to infuse the flavours.
When the garlic is starting to go golden, add the dressing, soft cheese and lemon juice. Stir well until warmed through.
When the pasta is ready, save a small mug of the starchy water and drain.
Add the prawns to the sauce with seasoning and lemon zest.
Add the mug of pasta water and pasta to the frying pan and toss everything together.
Add the parsley and mix through.
Serve immediately with a green salad.
