I made this up to help maintain my weight when I was injured and couldn't do my normal running/sport. It has few calories but is good and filling.
Wash, top and tail carrots. Peel outer skin from piece of swede and sweet potato. Dice these ingredients and add to small saucepan. Add approx. double the volume of water and a pinch of salt. Bring to boil and simmer until soft (approx. 10-15 mins). Blitz with liquidizer and add chives and a few turns of black pepper. Check seasoning and serve.
Don't peel the carrots - the skin has lots of flavour and nutrients.
